If I pop the nano sim in my ipad mini 6 and choose the Verizon unlimited plan for $20, then remove the nano sim and pop it in my DJI modem, will it still work?

I really don't know.

Since I sold my dongle, I am using the sim in my iPad Mini 5 with no issues.

Not sure about Verizon.

Yes. I took the sim data card with the plan I have with AT&T (Rogers here in Canada) out of my Tripltek tablet and put it into my RC Plus controller modem and it worked perfectly.
